COCOBANANA PORRIDGE FOR BREAKFAST

YEES! I was so glad when I found this coconutmilk in the supermarket (in Sweden) today, the best coconutmilk if you ask me and the one I (and everybody) use for cooking in Thailand.

My best recipe with coconutmilk right now? Coco/banana porridge! Heavenly good, cheap and a quickfix breakfast in the morning!

When you prepare your normal oat porridge, change 1/3 of the water to coconutmilk and add a sliced or smashed overripe banana into your boiling porridge. Serve with sliced almonds, raisins (make sure they're organic), nuts, seeds, fruit, cinnamon or anything else you prefer!

1/2 cup (ish)(1 dl) oats

1 cup (ish) (2 dl) water

1/2 cup (ish) 1 dl coconutmilk

One sliced banana

A pinch of salt

Place the oats, the water and the coconutmilk in a large pan over medium heat

Add the banana and a pinch of salt, stirring as often as you can until its a smooth creamy porridge

Serve with your favorite toppings
