CARAMELIZED COCONUT/PEAR PIE AND SUNSET FROM HOME
I have to share this before I go to sleep, it was so so good. I'm really weak for pie with vanilla custard and I´m always making new variants. This is so much easier than it sounds, you only need;
Heat up the oven til 175·C
For the bottom;
3 pears (conference)
2 tbsp of coconutsugar
1 tbsp cinnamon
Cut the pears into thin slices and put it in a hot pan with the palmsugar about 5 min so the sugar melts and the pear get caramelized, add the cinnamon and mix around, put everything into a ovenproof pie dish.
For the 'topdough'
1/2 cup (1,3 dl) shredded coconut
1/2 cup hazelnutflour (I just mix hazelnuts in a food proccesor)
3 tbsp coconutsugar
1/2 teaspoon natural vanilla powder
A pinch of seasalt
100g melted butter
Mix everything in a bowl and put on the top over the pears, in to the middlepart in the oven about 20 min
For the custard
3 eggyolks
1/2 cup of coconutsugar
1 vanillabean or 1/2 teaspoon natural vanilla powder
2 tbsp maizeflour (maizena)
2 cups of milk
Whip together the eggyolks, coconutsugar and maizeflour til its fluffy.
Heat up the milk with the vanilla in a saucepan, make sure it's not burn!
Add the hot vanillamilk into the whipped eggs and keep whippin'
Put everything back into the saucepan and whip over the heat, take away from the heat when the custard starts to solidifies.
Cool it down in the fridge or eat it warm (I prefer cold custard)
This while watching the sunset from home was absolutely magic
