RAW BROCCOLI TABBOULEH

I never really liked the taste of broccoli until I did it raw marinated, it totally change the taste of it! This is one variant and the secret is squeezed lemon, a lot of parsley and a good virgin olive oil.

You will need;

A large head of broccoli

Juice from 1 lemon

A handfull chopped parsley

2-3 tomatoes

1 small red or white onion or 1-2 spring onions

Olive oil

Salt or herbsalt

Mix (or pulse) the broccoli in a food proccesor til its like couscous size, dont throw away the trunk, it's perfect for tabbouleh!

Chop (with a knife) the parsley, tomatoes and the onion til its finely chooped. (I normally only use the food proccesor to the broccoli in this recipe, the tomatoes becomes very watery)

Put everything into a big bowl and mix around everyhing with the lemonjuice, olive oil and salt.

I had it with fried cheese, hummus and some avocado crackers - it was so good!
