ZUCCHINI FEVER

I bought some really nice zucchinis yesterday so today there was a lot of zucchini on the menu. I made one raw variant with Zoodles (zucchininoodles) and another vegetarian variant with eggs, as a Frittata.

Juani´s (my fiancé) first happy comment was -Yey! Are we having pasta for lunch? Then he took a closer look and changed -Aww, it's vegan pasta! The dissapointed tone changed quickly when he tried to a -Wow, this is really good!
I love when he loves my 'vegan-food', High score!
We also tried some local goat cheese, really good!
Raw Zoodles with sundried Tomato dressing
1 green zucchini (cut into noodles)
2 black tomatoes (thin slices)
A small spring onion (sliced)
Finely chopped parsley
5-6 sundried tomatoes mixed with oliveoil and salt (and if you want mix sunflowerseeds, walnuts or pinenuts and some parmesan)
Zucchini fritatta
4 eggs (quick whipped)
1/2 zucchini (sliced or noodles)
The greenest part of a spring onion (sliced)
salt, pepper, olive oil
Fry the zucchini and the onion in the pan around 2 minutes, add the eggs and let it 3-4 min, use a plate when you flip it over, lower the heat and leave it for another 3-4 minutes.
